Crock Pot Pulled Pork

With a new baby (7 weeks is still new, right?) and a toddler, quick recipes are a must right now. I don't have time to slave away in the kitchen for hours (not that I ever did...); I need something that can be thrown in the slow cooker or prepared during nap time. 

One of David's favorite meals is this slow cooker pulled pork; it also has Riley's stamp of approval. With just a handful of ingredients, it's ridiculously simple to prepare and delicious. Everyone who has come over when I've made it has loved it (Is anyone really going to tell me it's disgusting, though??). We'll leave out the nutritional information, my friends - it isn't pretty. Your waistline definitely wouldn't thank you for eating it every day for the next month. 

 Here's the "recipe," if you can call it that:

  • 2.5 - 3.5 lbs of boneless country style ribs
  • 1 can of soda (I've used root beer and Coke)
  • Garlic salt to taste
  • A bottle of your favorite bar-b-q sauce (I used Sweet Baby Rays Original)

Place ribs and soda in the crock pot. Pour Coke over the top of the meat. Sprinkle garlic salt over the ribs. Cook on low for about 10 hours or high for about 5. I just cook it until I can easily pull it apart with two forks (it basically falls apart when it's done). 

Once it's finished, drain the liquids, shred the meat, and put it back in the crock pot. Add sauce and more garlic salt to taste and serve. 

I like to serve it with homemade rolls, mashed potatoes, and green beans, but we went with sweet potatoes last night and Sister Schubert's rolls last night for the sake of time.
